Actually, it’s more like a chowder. ^^
I can’t believe it’s been this long since I’ve posted, and here I’ve let many a wonderful recipe go to waste! Well, no more (hopefully)!
Today’s official recipe title is “Avocado-Corn Chowder With Grilled Chicken.” It can be found on MyRecipes, but is in fact a Cooking Light recipe. I made the original from a huge Cooking Light book, and thankfully I was lucky enough to locate it online.
Avocado-Corn Chowder With Grilled Chicken
I assure you, it’s much better than it looks and sounds! The only people I can imagine not liking this are avocado-haters. I won’t even say that cold-soup-haters will necessarily dislike it, because my mom’s friend (who hates cold soup) thoroughly enjoyed it. 🙂 But you’ll have to try it and see for yourself.
Yes folks, it is a cold soup. Hope that doesn’t deter you, but seriously, a nice cold chowder is the best thing I can think to eat on a hot summer night.
The great thing about Cooking Light recipes is that they’re both tasty and healthier than your average recipe. Note I said “healthier,” not “healthy.” XD
I’m a big advocate of “healthy can be tasty,” and this chowder is just the thing to bring the point home. I’ve made it about three times now, and so far it’s been a success with everyone I’ve served it to.
The recipe is easy to follow and not crazy-expensive. On top of that, as I’ve said, it’s delicious. I don’t know what more you could ask for. 🙂
You’ll start with the vegetables, of course. I’m actually not a big fan of bell pepper, but I added it anyway to give the chowder a little color. I think even a bell-pepper-hater won’t mind it in this fix.
Although the recipe calls for buying chicken and grilling it (after all, it does say “with grilled chicken” in the title…) I cheated and bought one of those already-made whole chickens you find in the deli section. Works better, in my opinion, but maybe that’s because I’m usually averse to any kind of chicken without skin and bones. XD
You’ll end up getting this fine specimen on your table if you check out the recipe! Trust me, it truly is way more delicious than it looks – and I think it looks very fine. 😉
